Title: Garlic Parmesan Mashed Potatoes

3clGarlic, unpeeled
  Water to cover
4cFrozen mashed potatoes
2cSkim milk
1 Egg yolk, lightly beaten
1/2cGrated Parmesan

Boil water and garlic 10-15 minutes until soft and tender. When cool enough to handle, remove skins and mash.

Combine frozen potatoes, milk and garlic in saucepan. Cook 5 minutes, stirring frequently. Add egg yoke and cook 1 minute longer, stirring. Stir in cheese; let stand a minute or two.

Per serving: 170cal., 8g pro., 20g carb., 5g/30% fat, 45mg chol., 311 mg sod.
